No Meat November

I read about #NoMeatNovember a few years ago, and I think giving up meat for a good cause is worth it. Well, all of those attempts failed miserably. This time, I was serious. I do not know what put me in gear but, I am seven days clean, and I will be recapping on Fri/Sat ish each week my experiences.

Week 1

I have made it seven whole days without eating a morsel of meat.

Check out a small glimpse of my week through my thoughts. I am going to give you highlights. I cannot remember the full day.

Day 1

Well, look at you! You are ready for the challenge! Order as many vegetables as possible. Be stocked and vigilant to ward off temptation. Do I want to do this? I do not have to tell the people I can come up with another challenge. Like a mini-challenge, until the items come in for the; I Can Do This Challenge. (Shipping time has been delayed due to corona…Coming Soon!) Nah, you make the graphic, you look great, you have this! Tacobell with beans it is. I am winning!

Day 2

Vegetables delivered (5 am). Thanks, Amazon! Awww, not eating meat is not so bad! I think this will be a walk in the park. Can I still have my peanut butter toast with cinnamon? Yes? Say no more! However, too much bread messes up ya lady parts, chill. So, what are we making? I have jasmine rice, and I have bell peppers. It makes sense to make curry rice. Lol. I promise this was a delicious meal to make. However, I thought of it intending to eat meat with it. You ole carnivore you. Lol.

You are doing great, and now we are panicking! Sis! You need to eat all these vegetables you ordered! You know they go bad fast. I put out a calling call for help! Crisis adverted. Thank you, Hope! She sent me all those vegan food pages! I appreciate you, I adore you, you loyal! In my DJ Khalid voice.

Later that night…Kim you know you cannot eat that much so, save some space for when you go to the bday party later. Tacos? Yes, please! Can you remove the meat and add beans, please?

Why is this waiter looking at me like I am crazy? I know this request is not weird. Lol. We are in the world of plant this and vegan that. Lol.

Tacos are fire! The fries are salty. Maybe it is because I am sensitive to salt. Lol. idk. Either way, we are taking this home. I will add it to my meal plan tomorrow.

Day 3

It is muthafn’ election day! I canceled my appointments. I do not want to be out unless I have to. My fast is not over until 9, and I am hungry. Ok, I will break my fast with the regular cinnamon toast and peanut butter. It was deliciously on point. Now, lunch, I am going to have leftover tacos! Lunch is here, and it is too salty for me to enjoy. I throw that out, and I add some broccoli to my curry rice and bam! A new creation.

Next up? Squash and vegan breakfast sausage! I do not know where the idea came from; however, it happened! And it was good. That carried me through the night. Do not forget you had those mini Oreos too. A small bag, but we do not hide food anymore. Hiding food hindered you. We reveal so we can heal.

Day 4

This day is a complete blur. I didn’t even write down in my I Can Do This Journal. Hey, I’m human. I have no pictures to recall or anything! Pray for my strength. I don’t know what happened.

Day 5

Why is my head hurting so bad? I know I just pulled a hell of a shift at my second job. I think I went into convulsions during the night(in my mind). I shouldn’t be feeling like this.

Friend, I think something is wrong. We need to stop while we are ahead. ‘Dis tew much. What are you going to make? Your fridge is full, and you hungry. I don’t know what to make; I will hit the smoothie gang real quick. Two scoops of protein, cherries, a little water, and a spoon full of creamy PB? Don’t mind if i do!

This smoothie is good, yet I am super full. I didn’t eat anything until later that night. It was more squash. I was carrying around squash like it was candy, lol. Talk about being prepared. I am also learning that you have to hydrate even more. Water is important.

Ok, I realize that I planned this week poorly, and I need to get my *ish together! I look up some quick meals, I sit in my car until I have a food plan, and I go shopping for some supporting items since I already had a bin full of vegetables in the box. LOL.

Day 6

It is Friday! Alright, I’m ready to go, I planned the rest of the week, and I am off! Breakfast, veggie, and cheese omelet. It was delicious, and I looked up some tips on how to make a better omelet. It came out great, but I missed a few instructions, so it tasted great, but the presentation could use some work. LOL.

After that win, I knew lunch would be a no brainer. Again, Hope was the inspiration behind this! She sent me a vegan page with this wrap influence. Lol. It was the right kind of perfection. It was Mediterranean flavors with a splash of American style. They added fresh fries in the wrap, but it was too much to fit, and I know I could not eat that much at once. So, I had my fries on the side. What do you think?

Veggie wrap

Veggie Wrap

Avocados, dill weed seasoning olives, mushrooms, tzatziki sauce tomatoes, parsley, and a side of fries.

Oh, Dinner! Say no more! I whipped out the eggplant like nobodies business. LOL. My mom made these for me before, and they were fire. I needed to make mine a little different. I made a homemade pizza sauce with tomatoes and avocados. It was different but so flavorful. It took me all of 5-20 mins to make and bake these. This recipe was quick and easy to stack to be reheated.

All in all, this week didn’t suck. Lol. I had some brain fog, withdrawals, and some low points, but I made it! Be sure to check in with me next week!

Did you enjoy my week recap? What was the best part for you?
